Rhubarb Cake

Ingredients

  • 1/2 cup butter
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 cups rhubarb
  • 1/4 cup butter
  • 1 teaspoon cinnamon
  • 1 cup packed brown sugar
  • 1 cup flour

Directions

  1. Cream the sugar and butter; beat in the egg and vanilla.
  2. Alternately add the dry ingredients and buttermilk, then add the rhubarb.
  3. Combine the topping ingredients and spread over the cake.
  4. Bake at 350°F for 45 minutes.

2 Cups flour
1 teas soda
1/2 teas salt
1 Cup buttermilk
2 Cups rhubarb
Method Cream sugar & butter beat in egg & vanilla. alternate dry ingredients with buttermilk add rhubarb.
Topping
1/4 Cup butter, 1 teas Cinnamon, 1 Cup Brown sugar packed, 1 Cup flour
spread over cake. Bake at 350° for 45 Min
